More GNO Goodness

For those who were at this last GNO and can't wait to get their hands on the recipe for that yummy dessert or for those who couldn't make it and want another option in the recipe box...here you go!

Caramel-Drizzled Pumpkin Poke Cake – October GNO
From the kitchen of Lori Connelly

Cake
  • 1 box yellow cake mix
  • 1 cup pumpkin
  • 1/3 cup water
  • 1/3 cup vegetable oil
  • 4 eggs
  • 2 teaspoons pumpkin pie spice

Topping
  • 1 can (14 oz) sweetened condensed milk
  • 3/4 jar (from 12 oz jar) caramel topping
  • 12 - 16 oz Cool Whip, unthawed
  • 1/4 cup chopped pecans
  • cinnamon

Heat oven to 350 degrees.  Grease or spray bottom only of 9 x 13 pan.

In large bowl, beat cake mix, pumpkin, water, oil, eggs & pumpkin pie
spice with electric mixer on low speed until moistened, then on medium
speed 2 minutes.  Pour into pan.  Bake 25 or 30 minutes or until cake
springs back when touched lightly in center.  Let cool about 5 minutes.

Poke cake every inch with handle of wooden spoon.  Drizzle sweetened
condensed milk into each hole poked.  Let stand about 5 minutes until
condensed milk has been absorbed into cake.

Take lid off of caramel jar & place in microwave on High for about 15
seconds.  Spoon about 3/4 of the jar of caramel into each hole.  Cover
& refrigerate for about 2 hours or until chilled.

Spread unthawed Cool Whip on cake to frost.  Sprinkle cake with cinnamon
& pecans.

Store cake loosely covered in refrigerator.

Another night of fun! Girl's Night Out ~ Oct 10th

Yep, life is a journey and we're taking time to play! Whether you are a fierce competitor or an avid spectator, whether you like games that keep you on your feet or laid low in a comfy chair with a snack - this night of fun, fellowship, and prizes is for you! Get your game on and grab a friend - your won't want to miss out on the fun! It's not all about fun and games. Tara Cox will also be sharing and encouraging us with her personal journey in life. "Grounded" coffee shop opens at 6:30pm, featuring Pumpkin Latte's and Apple Carmel Cider! Program starts at 7:05pm. Childcare is provided.

Here's the first of four exciting chances to figure out the clue for our main game next Monday (they'll be embedded in this and the next three sneak peaks). LET'S see if you can figure out the answer before GNO. In the meantime, we'll pull back the curtain a little, each day this week, to reveal the fun to be had next week. Here's your first glimpse.

Option 1) Try to translate the seemingly simple image in your brain, with your uncooperative hand, as you draw clues for your randomly guessing Pictionary teammates. Yelling is perfectly acceptable. (You'll do it anyway)

Look for the next clues each day on Facebook. We will send them all out to you by email on Sunday if you miss them!

Ladies' Night Out Recap

A couple of pictures from our last Ladies' Night Out...
Poppy Smith
One of the beautifully decorated tables.

If you were at Ladies' Night Out a couple of weeks ago, then you were lucky enough to hear what Poppy Smith shared with us! We had a wonderful evening singing praise songs, eating a delicious dessert, and hearing from Poppy. Isn't it so easy to get wrapped up in the daily grind of being a mom, a wife, or a working woman, and all who have lots of duties?! And when we're busy, what so easily gets pushed to the side? Spending time with God and in His Word. Poppy shared if you want more time in your life to spend with God, you need to have an attitude of that and make it a priority. She says to pray the Holy Spirit would help you to have the desire in your heart. Pray about it and live it out in obedience. Poppy says, "Until we have a hunger for what God wants to do in us, we have to do the work-not God. A passion for God is what causes us to read and make the time to spend with Him. Until you seek Him with all your heart, you won't experience His power in your life." Matthew 4:4 says, "But He answered and said, "It is written, 'MAN SHALL NOT LIVE ON BREAD ALONE, BUT ON EVERY WORD THAT PROCEEDS OUT OF THE MOUTH OF GOD.'" Are you "eating" the Bible and digesting it? Are you taking the time to let God's Word nourish and feed you?

If you're interested in making the dessert we had at Ladies' Night Out, here is the recipe:
Butterscotch Delight - January 2011 LNO
From the Kitchen of Amanda Acker

1/2 cup + 2 TBS butter
1 cup flour
1/3 cup sugar
Dash of salt
Spray 9X13 pan with cooking spray. Mix crust ingredients and press into the bottom of prepared pan. Bake for 15 minutes at 350 degrees until lightly browned.

Cream Cheese Filling
8 ounce cream cheese, softened
1 cup powdered sugar
1 cup cool whip
Mix cream cheese and sugar, beat well. Fold in cool whip. Spread on cooled crust.

Butterscotch Layer
2 pkgs instant butterscotch pudding
3 cups milk
1 tsp vanilla
Beat well and pour over cream cheese layer.

Topping
2 cups cool whip spread over top. Refrigerate. Prepare this dessert the day ahead of serving.

Mark your calendars for our next Ladies' Night Out: Febrary 21, 2011 at 6:45pm!
