December GNO Recipes!


Chocolate Sour Cream Peppermint Cupcakes
From the Kitchen of Nikki Hughes

1 box dark chocolate cake mix
1 1/4 cup water
3 large eggs
1/3 cup vegetable oil
1/2 cup sour cream
1/4 cup unsweetened cocoa powder
1 teaspoon peppermint extract
1. Preheat oven to 350ยบ F. Line muffin tins with paper baking cups.  (Silver would be nice, available at Wal-Mart).  In large mixing bowl, combine cake mix, water, eggs, vegetable oil, sour cream, cocoa powder and peppermint extract. Beat on low speed until batter is moist. Increase speed to medium and beat 2 more minutes.
2. Fill muffin cups three-quarters full. Bake 18 to 20 minutes, or until cupcakes spring back to the touch. Cool completely on wire racks. Makes 24 cupcakes.
3.  Provide 2 cans of whipped vanilla frosting to be frosted at the church.


No Bake Chocolate Peanut Butter Pretzel Bars
From the Kitchen of Amanda Acker

•  2 cups creamy peanut butter, divided
•  3/4 cup (1 1/2 sticks) butter, softened
•  2 cups powdered sugar, divided
•  4 cups (roughly ½-inch pieces), broken small pretzel twists, divided
•  2 cups (12-oz. pkg.) chocolate chips, divided

LINE 13 x 9-inch baking pan with foil leaving an overhang on two sides. Lightly spray foil with nonstick cooking spray.

BEAT 1 1/4 cups peanut butter and butter in large mixer bowl until creamy. Gradually beat in 1 cup powdered sugar. Stir in remaining 1 cup powdered sugar, 3 cups pretzel pieces and 1/2 cup morsels. Press evenly into prepared baking pan. Smooth top with spatula.

MICROWAVE remaining 1 1/2 cups morsels and 3/4 cup peanut butter in medium, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 45 seconds; STIR. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Spread chocolate layer evenly over powdered sugar mixture. Sprinkle with the remaining pretzel pieces, pressing down lightly. Refrigerate for at least 3 hours or until firm. Lift from pan; peel off foil. Cut into 60 pieces. Store in covered container in refrigerator.


Holiday Hug Pretzels
From the Kitchen of Lori Connelly

1 bag of waffle pretzels (square)
1 bag of holiday M&Ms
1 bag of Hershey Hugs

1.            Preheat oven to 200 degrees.
2.            Line baking sheet with parchment paper or aluminum foil.  Lay however many pretzels you want to make on the sheet.
3.            Unwrap Hugs and place one on each pretzel.  Stick in the oven (about 4 or 5 minutes) until the Hug begins to melt but not cook.
4.            While the Hug Pretzels are in the oven, get your M&M’s out and ready because you will have to work fairly quickly after they come out of the oven.
5.            Remove Hug Pretzels from oven and gently press a red or green M&M down on each one. (The Hug should flatten out when you press the M&M in it.  If it is not flattening out, place the Hug Pretzels back in the oven for 30 more seconds.)
6.            Let the Holiday Hug Pretzels cool completely and let the chocolate set for about 1 hour.  Enjoy!

Dinner Bell! - Serbian Ground Beef, Veggie, and Potato Bake


Serbian ground beef, veggie and potato bake
(from AllRecipes, tweeked by Cathy Cordero:))
*I used ground sausage  instead this time, omitted the crushed red pepper, reduced pepper to 1/8 tsp and used 5 potatoes and made 2 layers of meat and 3 of potatoes. 
INGREDIENTS:
1 pound ground beef
1 tablespoon olive oil
1 green bell pepper, chopped
1 onion, chopped
1 carrot, shredded
2 celery stalks, chopped
1/2 tablespoon paprika
1/2 teaspoon salt
3/4 teaspoon black pepper
1/4 teaspoon crushed red pepper
1 pinch ground cinnamon
1 pinch ground cloves
1/4 cup water
1/8 cup red wine
1 cube beef bouillon
2 tablespoons half-and-half
2 potatoes, peeled and sliced
DIRECTIONS:
1.Preheat oven to 400 degrees F (200 degrees C). Lightly grease a casserole dish.
2.In a skillet over medium heat, cook the beef until evenly brown. Remove beef from skillet, reserving juices, and set aside. Mix in the olive oil, and saute the green pepper, onion, carrot, and celery until tender.
3.Return beef to the skillet, and season with paprika, salt, black pepper, red pepper, cinnamon, and cloves. Stir in the water and red wine until heated through. Dissolve the beef bouillon cube into the mixture. Remove skillet from heat, and mix in the half-and-half.
4.Layer the bottom of the prepared casserole dish with enough potato slices to cover. Place the beef and vegetable mixture over the potatoes, and top with remaining potatoes.
5.Cook, covered, 45 minutes in the preheated oven, or until the potatoes are tender.

Dinner Bell! - Tamale Pie


Tamale Pie from the kitchen of Nikki Hughes

2 pounds ground beef
1 green pepper
1 onion
1 can cheddar cheese soup
1 small can sliced olives
1 8oz can tomato sauce
¼ cup water
2 – 8 oz boxes corn muffin mix

Brown hamburger, onion and green pepper, drain fat.
Add remaining ingredients (except for muffin mix) and simmer 5 minutes, uncovered.

To Freeze: Cool mixture and divide in half, bag in a gallon freezer bag.  Squish flat to freeze.  Mark muffin mix boxes for Tamale Pie.

To Serve: Thaw mixture.  Mix up muffin mix according to directions on box.  Spread ¾ of the mix on bottom of pan.  Pour meat mix over it, then spread, as best you can, the remaining ¼ of the muffin mix on top.

Bake uncovered 20-25 minutes at 350 degrees.

Note: Two boxes of muffin mix & both bags of meat mix can be used in a 9 X 13 pan.

Dinner Bell! ~ Cowboy Casserole

Tried and true comfort food.:)

Cowboy Casserole (from the kitchen of Cathy Cordero)
adapted from a recipe at Taste of Home
1 1/2 pounds ground beef (I used 80/20)
1 medium onion, chopped
3 cloves garlic, chopped
1 can (15.25oz) whole kernel corn, drained
1 can condensed cream of mushroom soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots (I used Ore-Ida Crispy Crowns)

Before I got ready to make this casserole, I let the Crispy Crowns sit on the counter to defrost for an hour or so. The original recipe used still frozen tater tots, but I felt they wouldn't cook as well if they were still frozen solid.

In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place into a large bowl and set aside.

In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.

Grease a 9x13 inch baking dish. Layer half of the Crispy Crowns on the bottom, pour the hamburger mixture over the top and then layer with the other half of the Crispy Crowns. Sprinkle with remaining 1/2 cup cheese and bake at 350 for 25 - 30 minutes, or until golden brown and crunchy.

Lunchtime Bible Study Interest??!!


Women’s Discipleship Lunchtime Bible Study
Are you interested in studying God’s Word with a small group of women, but the regular Discipleship times don’t fit your schedule?  We’re trying to determine if there is interest in a Women’s Discipleship Bible Study that would meet on Wednesdays during the lunch hour, from 12:00-1:00pm at church.  Childcare would not be provided during this time.  If you’re interested, please call the church office (503-588-0403) and provide your contact information.  We will contact you as we get the details ironed out.  If there is enough interest, the hope would be for the group to begin meeting in January.

grab your chicken breast or strips and put in a gallon baggie with Italian dressing for a couple of hours to overnight
Take out of dressing and put into casserole dish.
Put pepper jack cheese on top
bake at 350 for 45-60 minutes till cheese is bubbly and slightly brown

Girl's Night Out is TONIGHT!


Get ready for round two of Girls' Night Out Game Night, tomorrow night!
You won't want to miss this night of fellowship, fun and prizes! There will be a yummy snack and candy bar, lots of drinks to choose from, friendly competition, prizes, fun and fellowship to be had by all! We will end the night with Angi Greene, who will help us define what Real. Relationships. look like. Let's face it, without each other, life would be one long game of solitaire! Don't stay home tomorrow night, come warmed up and ready to play! Whether you enjoy a fast pace game like spoons, a physical challenge like ping pong or foursquare, or you prefer to sit with a friend and do a quiet game or puzzle, there will be something for everyone. Bring a friend! Childcare provided. Grounded coffee shop opens at 6:30 and program starts at 7:05pm. See you there!

Dinner Bell! (a day late...oops)

Sorry, I forgot to post this yesterday! Crazy day full of chaperoning a rainy/cold field trip and going to Harvest/Halloween festivities...;)

But here's a little something to warm you up!

This comes from the kitchen of Becky Griffiths!


Salmon Chowder from the kitchen of Becky Griffiths

1 onion, diced
1 red bell pepper, diced
1 cup celery, diced
2-4 cloves garlic
1 cup shredded or diced carrots
2 cups diced sweet (light flesh), red, or russet potatoes
1 tsp salt
1/2 tsp pepper
1 tsp dill (get fresh dried dill from bulk at Winco, don't use the stuff that's been on your shelf since you were married. Unless of course you're a newlywed!)
1 quart chicken broth (should be enough to just cover veggies
2-3 cans salmon OR FRESH, baked salmon(Costco has really nice canned salmon at a good price)
1 can creamed corn
2 cups cream, milk, half 'n half, fat-free evaporated milk, OR fat-free half 'n half (depending on your preference or fat content. The more the merrier in my opinion!)
Sautรฉ the onion, pepper, and celery for roughly 5-10 minutes. Stir in garlic, salt, pepper, dill, carrots, potatoes. Add chicken broth and simmer for 20-30 minutes, or until veggies are soft. Add in salmon, corn, and whichever white stuff you decide on and heat until hot.
Great with salad, homemade or store bought crusty bread.

Dinner Bell

It's Oregon, it's fall, it's soup time!

Delicious the first, 2nd, 3rd time around...:)

White Chicken Chili from the kitchen of Cathy Cordero

1 tablespoon of oil
1 onion, chopped
2 cloves of garlic, minced
1/2 Tablespoon cumin
3 chicken breasts, cooked and shredded
2 cans navy beans, drained 
1 cup frozen white corn, or 1 can white corn
1/2 can of cream corn (freeze the other half for next time)
4oz can of chopped green chiles
2 cups of chicken broth
1/2-1 Tablespoon chili powder
1 can petite diced tomatoes
3 or 4 tablespoons salsa verde 

Garnishes:
Sour cream
chopped cilantro 
shredded cheddar or Monterey Jack cheese
tortilla chips.

Saute onion, and garlic in hot oil in a large stock pot until tender. Add remaining ingredients and mix well. Simmer over low heat for 30-60 minutes.


*I like to saute the onion and garlic and just throw all the ingredients in the crock pot for a few hours!!

First Girl's Night Out TONIGHT!


Have you ever tried to look through a dirty lens? Maybe you've had the experience where you cleaned the outside lens of your camera only to discover later that there was some rogue speck of dust on the inside of your lens that left its mark on every last picture. In any case, the lens in which we look through greatly impacts the picture we see. When our lens is not as it is intended, the way we see will be blurry and smudged at best; marred and distorted at worst. This year we will be taking a close look at the lens we use to view life. When we look through the clear lens of Scripture through the person and work of Jesus Christ, we will view life as it really is - not as the world tells us, or even what we tell ourselves.
Don't we all want to be a part of something "real"? Join us September 10thas Julie Bernard encourages us with "Real. Identity." You won't want to miss the start of our fun, fellowship-filled evenings this year - we have many exciting plans in store - we are just getting started!  Bring your friends and plan on joining us tomorrow night! Just thought I would share a deal I came across for the Oroweat Bakery Outlet on Silverton Rd here in Salem.

I have used this deal site before with no problems!

You pay $5 for a $10 certificate to spend at the outlet! And you can purchase up to 5 certificates!

I often buy the max I can and then go to the outlet once a month and stock up my freezer with yummy bread, bagels, english muffins, etc!

It is time once again to register for Women's Discipleship at Salem Heights Church, which begins in September! Please click the link below to register online. This year we are excited to offer the option to pay online either by credit card or by PayPal.  If you would prefer to pay by cash or check, the online registration also allows you to select a "Pay Later" option.  You may then make your payment at the the Women's Discipleship registration table on Sundays between August 26 and September 23, or during the first meeting with your group.   Online registration is easy.  Your prompt registration aids our planning for the start of Discipleship.  This year there will be five studies offered on both Tuesday evenings and Wednesday mornings:

Next Girl's Night Out - Be Creative!!


Life's a Journey... Be Creative!

We're taking time to get our creative juices flowing by devoting our April Girls' Night Out to Switch Ups*! Here's where you come in. Plan on joining us for a fun night of fellowship on April 16th. Choose one of the following projects and bring the item listed on the night of April 16th:

Fabric Flower - Bring in an old T-shirt (or any shirt/fabric)
Wreath - Bring in an old book
Pom Pom - Bring in some yarn
Art - Bring in an empty picture frame


Voila! Together we will turn your something old into something bold! If you feel like a creative novice, no worries, we will have plenty of helpers to get you to the finished product.

*Switch Up - taking one item and turning it into something new; giving an old thing new life or purpose.

If you would like to donate supplies to help out with this fun, free evening, we have provided a list of needed items. Please drop them off in the office or the designated containers at the entrances to Salem Heights Church.

Tomorrow Night is Girl's Night Out!!!


You've heard she's coming.... and tomorrow she will be here! No matter your age, no matter what your favorite style of music is, you will leave, encouraged and challenged, your spirits lifted!  Dawn is a spunky southern gal who will charm us with her voice, inspire us with Truth, and show us how to live a life of joy despite our circumstances.  You will want to bring a friend for this one!   As always, grounded coffee shop will open at 6:30pm and the concert begins at 7pm.

Partners In Prayer - January 4th
