Dinner Bell! ~ Cowboy Casserole

Tried and true comfort food.:)

Cowboy Casserole (from the kitchen of Cathy Cordero)
adapted from a recipe at Taste of Home
1 1/2 pounds ground beef (I used 80/20)
1 medium onion, chopped
3 cloves garlic, chopped
1 can (15.25oz) whole kernel corn, drained
1 can condensed cream of mushroom soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots (I used Ore-Ida Crispy Crowns)

Before I got ready to make this casserole, I let the Crispy Crowns sit on the counter to defrost for an hour or so. The original recipe used still frozen tater tots, but I felt they wouldn't cook as well if they were still frozen solid.

In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place into a large bowl and set aside.

In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.

Grease a 9x13 inch baking dish. Layer half of the Crispy Crowns on the bottom, pour the hamburger mixture over the top and then layer with the other half of the Crispy Crowns. Sprinkle with remaining 1/2 cup cheese and bake at 350 for 25 - 30 minutes, or until golden brown and crunchy.

Lunchtime Bible Study Interest??!!


Women’s Discipleship Lunchtime Bible Study
Are you interested in studying God’s Word with a small group of women, but the regular Discipleship times don’t fit your schedule?  We’re trying to determine if there is interest in a Women’s Discipleship Bible Study that would meet on Wednesdays during the lunch hour, from 12:00-1:00pm at church.  Childcare would not be provided during this time.  If you’re interested, please call the church office (503-588-0403) and provide your contact information.  We will contact you as we get the details ironed out.  If there is enough interest, the hope would be for the group to begin meeting in January.

Dinner Bell

Easy Pepper Jack Chicken  from the kitchen of Bethany Schultz

grab your chicken breast or strips and put in a gallon baggie with Italian dressing for a couple of hours to overnight
Take out of dressing and put into casserole dish.
Put pepper jack cheese on top
bake at 350 for 45-60 minutes till cheese is bubbly and slightly brown

Girl's Night Out is TONIGHT!


Get ready for round two of Girls' Night Out Game Night, tomorrow night!
You won't want to miss this night of fellowship, fun and prizes! There will be a yummy snack and candy bar, lots of drinks to choose from, friendly competition, prizes, fun and fellowship to be had by all! We will end the night with Angi Greene, who will help us define what Real. Relationships. look like. Let's face it, without each other, life would be one long game of solitaire! Don't stay home tomorrow night, come warmed up and ready to play! Whether you enjoy a fast pace game like spoons, a physical challenge like ping pong or foursquare, or you prefer to sit with a friend and do a quiet game or puzzle, there will be something for everyone. Bring a friend! Childcare provided. Grounded coffee shop opens at 6:30 and program starts at 7:05pm. See you there!

Dinner Bell! (a day late...oops)

Sorry, I forgot to post this yesterday! Crazy day full of chaperoning a rainy/cold field trip and going to Harvest/Halloween festivities...;)

But here's a little something to warm you up!

This comes from the kitchen of Becky Griffiths!


Salmon Chowder from the kitchen of Becky Griffiths

1 onion, diced
1 red bell pepper, diced
1 cup celery, diced
2-4 cloves garlic
1 cup shredded or diced carrots
2 cups diced sweet (light flesh), red, or russet potatoes
1 tsp salt
1/2 tsp pepper
1 tsp dill (get fresh dried dill from bulk at Winco, don't use the stuff that's been on your shelf since you were married. Unless of course you're a newlywed!)
1 quart chicken broth (should be enough to just cover veggies
2-3 cans salmon OR FRESH, baked salmon(Costco has really nice canned salmon at a good price)
1 can creamed corn
2 cups cream, milk, half 'n half, fat-free evaporated milk, OR fat-free half 'n half (depending on your preference or fat content. The more the merrier in my opinion!)
Sauté the onion, pepper, and celery for roughly 5-10 minutes. Stir in garlic, salt, pepper, dill, carrots, potatoes. Add chicken broth and simmer for 20-30 minutes, or until veggies are soft. Add in salmon, corn, and whichever white stuff you decide on and heat until hot.
Great with salad, homemade or store bought crusty bread.
